Recipe of the Month
HEARTY BEEF STEW
2 lbs. Top sirloin, cubed (or stew meat).
¼ cup flour
1 large onion, chopped into 1” pieces
2 stalks celery, 1′ pieces
1 clove garlic, minced
1 cup red wine
1 can diced tomatoes
4 cups beef stock
1 tsp rosemary
1 tsp thyme
1 cup carrots, 1” pieces
2 potatoes, 1” pieces
season the flour with a pinch of salt and pepper. Toss the cubed meat in the flour and shake off any excess.
In a large stock pot, coat the bottom of the pot with the oil. Heat the oil on the bottom, in batches brown the beef on all sides and remove to a bowl. Repeat until all the beef is done. Add the onion and celery and saute for 5-7 minutes until they are soft. Add the wine and stir around to loosen all the bits on the bottom.
Add the beef back in the pot, the diced tomatoes and then cover the beef with the stock (you may not need all the stock). Add the rosemary and thyme. Stir, then cover. Keep on medium heat for about 2 ½ hours or until the beef is tender.. Add the carrots and potatoes and cook another 30 minutes. Season with salt and pepper.
